Easy Asian Melting Pot Marinade

For Use What You Have Sunday- I wanted to finally get rid of these ridiculous chicken thighs I've had in the freezer.  A huge pack of them were on sale for next to nothing and I've been regretting buying them ever since.  They were mostly bone, skin, and fat, and are really bloody.  GROSS!  So last night I finally used up the last of them and I'm so glad!  That is a mistake I won't be repeating soon!  Much better off buying bone-in, skin-on breast- although it is much more expensive.  Anyways- I threw together a super quick and delish marinade for the chicken.  I eyeballed everything so amounts are approximate.

Asian Melting Pot Marinated Chicken
1/3 cup reduced sodium soy sauce
3 tbsp thai fish sauce
2 tbsp sriracha
1/3 cup rice wine vinegar
1 tbsp sesame oil
1 tbsp asian seasoning
3 green onions, sliced thinly

Mix all ingredients and then pour over chicken in ziploc bag and throw in the fridge for a few hours.  I broiled the chicken for 30 minutes using my convection feature and it came out perfectly cooked.  A dash of lime juice would be great, and a sprinkle of pepper.

This week I'm trying a few new things.  I've been hearing more and more lately about how some types of supplements can really help control blood sugar and increase insulin sensitivity.  I am going to incorporate cinnamon, biotin, and chromium supplements into my routine, in addition to a daily multi and magnesium.  I've also been hearing great things about HIIT, or high-intensity interval training.  Rather than my usual 30 minutes of 4MPH at  max incline- I did 4MPH at a 2 incline for five minutes, and then 1 minute of sprinting at 8MPH.  I am not a runner so 8MPH is really hard for me.  The goal is to get your heart rate to 90% of your max heart rate, which is 220 minus your age.  I repeated this 5 times for a total of 30 minutes.  It was brutal.  Totally brutal!  In a good way.  But man!  HIIT supposedly is instrumental for anyone with insulin resistance and also is a great way to burn fat.  It has been shown to reduce belly fat in particular, which is interesting.  I am just dabbling at this point but I'm anxious to see if I feel any different after a few weeks of alternating between normal, and HIIT days.  For more information- click here
